Coconut and Cacao Ice Cream Shake

I realise I haven’t been posting particularly summery recipes, largely because here in the UK it’s often touch and go as to whether we’ll actually be having a summer, but also because I’m a huge lover of hot, comforting meals. I am, however, looking to expand the variety of recipes here on The Green Genie, so today I’m bringing you a delicious, cooling ice cream shake!

This lovely drink is flavoured with cacao powder and toasted coconut flakes and is garnished with cacao nibs, all of which you can find in most health food stores and some large supermarkets. A squeeze of coconut nectar – my newest culinary love – is also a beautiful addition if you have it. You could also use maple or agave syrup. For this recipe I used ready-made vegan vanilla ice cream, which is widely available in large supermarkets, for convenience.

Coconut and Cacao Ice Cream Shake

Serves 2

Ingredients

120g vegan vanilla ice cream

2 tbsp cacao powder

4 tbsp toasted coconut flakes

400ml soy milk (I used light soy milk)

Garnish: Cacao nibs

Toasted Coconut Flakes

Coconut Nectar (optional)

  1. Combine all the ingredients, except garnishes, in a blender. Blend until smooth.
  2. Serve immediately garnished with cacao nibs, coconut flakes and coconut nectar.
